As I recall, Exim *used* to be really simple. I remember years ago
choosing exim over postfix because it was pretty simple and quick to
set up (we're talking circa 1998-2001). But then I didn't use it for
many years, and then recently, I installed it and tried to configure,
and wow, was it a lot different. Postfix seems to have pretty much
stayed the same over all those years.
At this point, I agree that Postfix is easier to configure than Exim.
But Postfix can (and is) used by high-use email servers. Works great.
