DansGuardian (http://dansguardian.org/ ) runs as a proxy in front of
squid which connects on to the internet.

Smoothwall (http://www.smoothwall.org/ ) is a 2.4 kernel based hardened
linux with a web-based configuration UI.  It would be preferable to do all
configuration via the interface so as to guarantee continuity as updates
get applied.  Of course, if necessary, it might be worth taking the
commandline route.
