Grip will both rip and encode at the same time (that's the only way I've 
ever used it).  I also don't know much about this stuff, but if you 
click on the "config" tab in Grip, it's a little mini-tutorial on the 
various encoders and their options.  Also, the "help" tab in Grip opens 
html-based documentation.
