You'll actually need two separate programs - a ripper and an encoder
(grip serves as a frontend for both).  AFAIK, the defacto standards
are cdparanoia (ripper) and bladeenc || lame (encoders, you only need
one and I don't really know which is 'better').

You can configure how the generated files will be named in the grip
config, it's relatively self-explanatory (I generally use
~/mp3s/new/%A-%n.<wav|mp3>, which dumps all created files into one
place with the naming convention $ARTIST-$TRACKNAME so that I may sort
them later at my leisure).  Also, there's a checkbox that will tell
grip not to create m3u files, if that's what you want.
