If I comment out stable with # apt-get update will ignore the commented
out lines...won't it?

I am *very* pleased to have open office working properly. It has also
fixed some of the problems from the last install I did including
copy/paste formulas in the spreadsheet.

I've also installed Opera with the following line in my sources list (and
the corresponding update and install).

# Opera browser
deb http://www.opera.com/debian stable opera

As far as I can tell there's no "unstable" for opera.
