Try /etc/syslog.conf (and "man syslog.conf", if necessary). This may turn 
out to be unhelpful; you may be unable to redirect the pop3 messages 
without also affecting other mail-related messages. But you may prefer to 
have them all go to (e.g.) /var/log/maillog anyway.
