Using one of the headers from your mail:

 Received: from localhost.localdomain (katie-and-rob.org [66.93.56.94])
         by www.linuxchix.org (Postfix) with ESMTP id 5DBD52732BC

The localhost.localdomain is your HELO. The katie-and-rob.org is the
result of a reverse lookup of 66.93.56.94.

Unless you control your reverse DNS (which may be possible in this case,
since there are two IPs in question) you can't control what your host
appears as in the reverse lookup.
