I run sid on my workstation. It has broken twice in the past year, but
ordinarily it is fine. And very cutting-edge.

I run testing on my server, and it is very stable. No problems, ever.
It's a nice balance between stable (read: OLD) and unstable (read:
RISKY). People tend to forget the "testing" distribution, although it
is probably the best one for many users.
