First I would try to remember what I last did that could have caused
it, and see if I can reverse that. If that's not possible, you could
right-click the panels and manually select the widgets that go in
them to set it all up again, or read on:

That's good news, and it means that you should be able to fix it by
deleting all the .gnome directories in your home directory. This will
set all of your GNOME settings back to default, so it will affect
many applications (which you'll need to configure again).
