Postfix managed to come up with a configuration scheme that gets more
complex as you want your server to do more complex things, but is
pretty simple to start with. The technical and conceptual complexity
of configuring exim nearly killed me last time I tried to get it up
and running. In most of the cases postfix will perform very well, exim
is really only useful if you have hugely specific needs.
All the above is only my opinion of course, to be taken with a grain
of salt and a slice of lemon.
