Well... this is my idea:
1. Install your prefered Linux distribution
2. Install Samba (for Windows file sharing)
3. Install Postfix (it will be your smtp server)
4. Install Courier-imap (this will be your IMAP mail server)
5. Install Webmin (for an easy way to keep/administer your server)
Your hardware choice was very nice for a home server and i think it will
work very well.
If you have a printer, you may try to use your server as a print-server too
( using CUPS will be a good way of doing that).
Later, when all things work, you may try to set an audio-stream server too
(with icecast) .
