How about:
1.) Set up a samba server for print, fax and home directories to be used by
both Unix and XP systems.
2.) Set up a DNS/DHCP server again to be used by both Unix and XP systems.
3.) Turn a linux server into a router.
4.) Set up a documentation server using apache and a wiki of choice.
5.)  Set up a Firewall or use Load balancer.
