Linuxchix!
Mailing lists for the distro you're using, and their archives.
http://linuxreviews.org/beginner/ - and there's a good basic BASH
tutorial there and links to heaps more.
The RUTE user's guide: http://www.obsidian.co.za/rute/.
http://www.linuxpowered.com/html/tutorials/ldp.html has a bunch of good
tutorial stuff too. You might find some of these as helpful as the
students do! Check around the rest of the site for more.
http://www.die.net/doc/linux/abs-guide/index.html for BASH scripting.
http://www.google.com/linux - start your search from the right place.

The O'Reilly Safari Bookshelf is pretty cool; it lets you read stuff
without having to own a dead tree.

Tux magazine is an online publication, free subscription, comes as a
pdf. It has some good stuff in it, but it's more for the user than for
the admin; the other print journals might be better (Linux Format,
Linux Journal).

Hope the class is a superb success!

Cheers,
