Acrobat Pro is lovely.
For the few things I've had to do (mostly non-editable forms) I've
wound up converting to image and working from there, but it means that
you wind up converting all the text to image which isn't generally a
good thing.
I've been hearing some stuff about pdf editing with free software, but
I haven't tried anything out yet. I'll see if I can rustle up some
links when I'm not tired, though.
