You might like to look at the overlap between backup and versioning
systems then (and versioning filesystems too, although they are scarce
in the OSS world.) A lot depends on the granularity you are looking for.
If once a week/hour is good enough rather than once-a-change then you
are more to the backup end of the spectrum.

It could be you are actually looking for a lightweight backup/rollback
system such as the rsync/symlinks system mentioned here a week or so
back.
