A set of topics can be:

1. Getting Started
2. Data Frames; Basic Statistics
3. Lists, Vectors, Matrices, Arrays
4. Graphs and Data Visualisation
5. Linear Models
6. Making R packages
7. Using R with code in other languages
8. Guide to specialised packages
9. Hypothesis Testing: Decision Making

Good, we could also add :
in the 3 : subseting data, and loops in R... (This was part of what i miss
in my R class at the university, and that i had to discover by myself, hard
way)
In the 4 : Exporting graphics and pictures in different format
Maybe before the 5 : Basic statistical test (Kolmogorov Smirnov, Student,
Anova.. )
A new one : Data mining with R : Neural network, cluster analysis, PCA... (R
have powerful tools, but not always the capacity to Handle the big
database.. ), and Graphs analysis.
and R also have easy way of handeling times series...
