Hi,
In addition to regular cron, Mac OS X Tiger (10.4) and now Leopard
(10.5) use LaunchD to configure system services and scheduled tasks.
Launchd uses picky XML configuration files, so you'll probably want
the free utility Lingon to manipulate them: http://lingon.sourceforge.net/
There's a decent amount of launchd information available in Google,
including Apple's docs. This AFP548 article is one of the most in
depth and technical: http://www.afp548.com/article.php?story=20050620071558293
