That should work mostly. I wouldn't recommend trying to use gnome from
woody together with the one from sid. I've had quite some problems
with gnome and kde upgrading their configuration files between major
versions, causing major head-aches in all sorts of areas. It behaves
worst when using gnome with a shared /home on two different machines
since gnome stores machine-specific information (e.g. keyboard layout)
in its config files. It's more annoying than a real show-stopper but
if you start using different versions of gnome on one account it will
probably lead to some allround weirdness.
