I get Shoshannah's rendering in Hebrew: this is probably a Content-type
nastiness. From what I understand, the problem is this:

 - the spec says "when the HTTP headers say one type and the page
   another, trust the headers"
 - HTTP headers are more fiddly to set AND Apache sets a default one to
   ISO8859-1 (which doesn't include Hebrew)

I probably need to check for it and remove and put in a meta tag with
the right encoding (UTF-8).
