If you want to usually use debian testing, but occasionally get
packages from unstable, you can use "pinning" instead of
commenting/uncommenting lines in apt-sources.  Pinning basically
allows you to say "I want to usually use testing, but when I say I
want something from unstable, keep it up to date with the version in
unstable".  There's a doc at:

that explains how to do this in detail.  Of course, you still have to
examine the list of packages to upgrade carefully, if you don't want
to inadvertently upgrade perl or something.
