No offense or accusations intended. I have no idea who he
is either, and honestly really wanted to know whether the
question had relevance outside of the spamming business.

As already mentioned, those come from the mail client.

I believe you. But I find that interesting, as my clients
don't seem to care about headers that are not usually
looked at.

Then as Raven notes, you'll need multiple instances of the
mail server. But you already said you didn't want to do
that.
