In my experience for what you want to do you will be much better off 
with core CS training (ideally with lots of security and networking 
programming and admin) than a general IT degree. 

The University I went to didnt have enough money to hire real 
sys admins so the director trained volunteer students to do the job,
that was the best work experience I got in school. If you can
get a job doing what you want while in school you will learn a lot more.
